Taco ’bout a delicious dinner idea.
Ingredients
- 2 1/2 cups local watermelon, diced
- 1 local jalapeño, finely diced
- 1/4 cup red onion, finely diced
- 1/4 cup cilantro, finely chopped
- 8 Schnucks corn tortillas, warmed
- 1 Schnucks rotisserie chicken, shredded
- 1/4 cup crumbled queso fresco or feta cheese
Instructions
- In a medium bowl, combine all salsa ingredients (watermelon, jalapeño, onion and cilantro). Cover and refrigerate at least one hour before serving.
- Build tacos by evenly topping warm tortillas with chicken, salsa and cheese.
