- 4 large russet potatoes
- 1 avocado, chopped
- 1/2 cup Schnucks shredded mozzarella cheese
- 1/2 cup broccoli, steamed and chopped
- 1/4 cup Greek yogurt
- 2 tbsp. chopped parsley
- 1 tbsp. Schnucks taco seasoning
- Use a fork to poke holes in potatoes.
- Microwave potatoes on high for 5 minutes. Flip potatoes and continue cooking until tender, about 5 additional minutes.
- Cut potatoes in half and top with your favorite toppings. Finish with a sprinkle of taco seasoning (if desired).
