Upside-Down Carrot Banana Bread

Ingredients

  • 6-8 small carrots, trimmed and halved
  • 2 tbsp. Schnucks unsalted butter
  • 1/4 cup honey
  • 1 box Pillsbury Banana Quick Bread Miix
  • 2/3 cup vegetable oil
  • 1/2 cup grated carrot
  • 2 eggs
  • 1 cup water

Instructions

  1. Preheat oven to 350 degrees; move rack to middle position. Line an 8x4-inch loaf pan with parchment paper and coat with nonstick cooking spray.
  2. In a large bowl, microwave Schnucks unsalted butter and honey until melted; stir to combine. Add the halved carrots and toss to coat; arrange in an even layer along bottom of the prepared pan and drizzle any remaining honey butter over top.
  3. In another large bowl, whisk together Pillsbury Banana Quick Bread Mix, water, vegetable oil, grated carrot and eggs; pour into pan over carrots.
  4. Bake about 1 hour or until a toothpick inserted in center of loaf comes out clean.
  5. Let cool 20 minutes before removing from pan. Serve warm or cool.
