Turkey Caprese Burger

Ingredients

  • 1 lb. lean ground turkey
  • 1 tsp. Italian seasoning
  • 1/4 tsp. ground pepper
  • 1/4 tsp. crushed red pepper
  • 1/4 cup reduced fat olive oil mayo
  • 1/4 cup fresh chopped basil leaves, plus more for garnish
  • 2 tbsp. Spice World roasted garlic
  • 1/2 cup Full Circle balsamic vinegar
  • 2 tsp. honey
  • 1 tbsp. vegetable oil
  • 4 slices (1 oz.) fresh mozzarella
  • 2 heirloom tomatoes, sliced
  • 4 whole wheat buns, toasted

Instructions

  1. In a medium bowl, combine turkey, Italian seasoning, ground pepper and crushed red pepper. Season with salt if desired. Form into 4 equal patties, about 4 inches in diameter.
  2. In a small bowl, mix mayo, basil and roasted garlic together. Set aside.
  3. In a small saucepan, bring balsamic vinegar and honey to a boil. Reduce heat to low and simmer 12 minutes, stirring occasionally, or until reduced by half. Set aside to cool.
  4. In a large nonstick pan, heat oil over medium-high. Reduce heat to medium and add burgers. Cook on one side for 4 minutes, flip and top with 1 slice mozzarella each. Cover and cook 3-4 minutes or until cooked through. Remove pan from heat and rest for five minutes covered.
  5. Spread approximately 1 tablespoon of mayo mixture on bottom of each bun. Top with burger, two tomato slices and drizzle balsamic glaze. Garnish with extra basil leaves and serve immediately.
