Tuna and Cabbage Salad Sandwiches

Ingredients

  • 1 can (12 oz.) chunk light tuna in water, drained
  • 2 cups finely shredded green cabbage
  • 1/4 cup green onion, finely sliced
  • 1 tbsp. parsley, chopped
  • 1 tbsp. lemon juice
  • 1 tsp. sweet and spicy mustard
  • 1/4 cup plain nonfat greek yogurt
  • 8 slices whole grain bread

Instructions

  1. In a medium bowl, shred tuna with a fork. Add the next six ingredients and stir to combine. Season with salt and pepper if desired.
  2. Cover and let sit for 15 minutes, stirring occasionally.
  3. Divide among 4 slices of bread, top with remaining bread. Serve immediately.
