Sweet potatoes just like your grandmother used to make, only served up in a new way.
- 4 sweet potatoes
- 1/4 cup Schnucks butter
- 2 cups mini marshmallows
- 1/2 cup Schnucks honey
- 1/2 cup pecans, chopped
- Preheat oven to 400 degrees. Pierce potatoes all over with a fork and arrange on a prepared baking sheet. Bake until tender, 40-45 minutes. Allow to cool.
- Preheat broiler. Slice each potato in half lengthwise and place on pan skin side down. Brush with butter and top with marshmallows.
- Broil until marshmallows start to toast, about 1 minute. Top with remaining ingredients.
Short on time? Microwave potatoes on high 11-13 minutes instead of baking.
