Pork Florentine Skillet

Pork Florentine Skillet

Ingredients

  • 4 (4-5 oz.) pork chops
  • 1 tbsp. olive oil, divided
  • 1 tbsp. unsalted butter
  • 1/4 onion, finely chopped
  • 1 garlic clove, minced
  • 8 oz. sliced mushrooms
  • 8 oz. spinach, chopped fresh or thawed frozen
  • 2 tbsp. flour
  • 1 cup skim milk
  • 1 1/2 cups low-sodium vegetable stock
  • 1 tsp. Schnucks Dijon mustard
  • 1 tbsp. chopped fresh parsley, plus more to serve (if desired)
  • 1 1/2 cups prepared wild rice
  • paprika, to serve (if desired)

Instructions

  1. In a large skillet over medium-high heat add 1/2 teaspoon oil and sear the pork chops for 2–3 minutes per side or until browned. Remove from pan and set aside.
  2. Add remaining oil and butter to pan. Add onion, garlic, mushrooms and spinach; sauté 5–6 minutes or until softened. Add flour and stir to coat vegetables. Stir in milk, stock, mustard and parsley. Place pork chops back in the pan. Bring sauce to a boil then reduce heat and simmer, stirring occasionally, 8–10 minutes or until pork is cooked through.
  3. Serve over wild rice. Top with chopped parsley and paprika if desired.
