Pantry-Powered Protein Sandwich

Ingredients

  • 1 (15 oz.) can white beans, drained and rinsed
  • 1 oz. crumbled feta cheese
  • 2 tbsp. Schnucks olive oil
  • 2 tbsp. minced red onion
  • 2 tbsp. fresh parsley, chopped (or 1 tbsp. dried parsely)
  • 1 tbsp. roasted red peppers, chopped
  • 1 tbsp. lemon juice
  • 1 tbsp. red wine vinegar
  • 1 tsp. Schnucks honey
  • 1/4 tsp. dried oregano
  • 4 slices toast

Instructions

  1. In a medium bowl, combine all ingredients besides toast. Season with salt and pepper, if desired.
  2. Cover and refrigerate at least 30 minutes.
  3. Serve over toast.
