These no-bake bites are perfect for breakfast on-the-go.
- ⅓ cup dried apricot halves
- 1 tbsp honey
- ⅓ cup Full Circle almond butter
- ¼ cup ground flaxseed
- ⅛ tsp salt
- ⅔ cup Schnucks rolled oats
- ½ cup shredded sweetened coconut
- Place apricots, honey, almond butter, flaxseed and salt in the bowl of a food processor. Pulse 5 times, then process the mixture for about 20 seconds.
- Scrape down the sides of the bowl and add oats. Pulse 5 times, then process for another 20 seconds.
- Use a tablespoon measure to scoop mixture; shape each scoop into a ball and roll in shredded coconut. Refrigerate until ready to eat.
