Give yourself a taste of Jewish cuisine with this delicious potato pancake that is often prepared to celebrate Hanukkah.

Ingredients

  • 1 bag (30 oz.) frozen shredded potatoes, thawed & patted dry
  • 1 medium onion, finely diced
  • 2 eggs, lightly beaten
  • 1 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. baking powder
  • 3 tbsp. Schnucks vegetable oil
  • 1/4 cup Schnucks all-purpose flour
  • sour cream for serving
  • applesauce for serving

Instructions

  1. In a large mixing bowl, place potatoes, onion, eggs, salt, pepper, flour and baking soda. Mix until just combined.
  2. In a large skillet, heat oil over medium heat. Working in batches, add 1/3 cup of mixture to hot oil and press down to flatten. Do not overcrowd skillet. Cook 3–5 minutes per side until golden brown. Keep warm in oven while cooking additional batches.
  3. Serve immediately with applesauce or sour cream, if desired.
