Kale Butternut Squash Breakfast Hash

Ingredients

  • 2 tbsp. olive oil
  • 1 small shallot, thinly sliced
  • 1 tsp. minced garlic
  • 2 tsp. Spice World slammin' Moroccan seasoning
  • 2 bags (9 oz.) frozen Steam'Ables butternut squash
  • 2 cups kale, stemmed and shredded
  • 4 large eggs
  • 2 tbsp. feta crumbles

Instructions

  1. In a medium sauté pan, heat olive oil on medium-high; add shallot, garlic and seasoning blend. Stir for 2 minutes or until golden and fragrant.
  2. Add frozen squash and season with salt and pepper if desired. Cook 10 minutes, stirring occasionally until fork tender.
  3. Add kale and cook 2 minutes, stirring until wilted. Using a wide, thin metal spatula, make 4 spaces in the vegetables and crack 1 egg per space; cover and allow to cook until whites are done but yolks are runny, about 5 minutes.
  4. Top with fresh feta and salt and pepper if desired. Serve immediately.
