Ingredients
- 6 yams or sweet potatoes
- 6 Schnucks large eggs
- 3 pieces bacon, cooked and crumbled
Instructions
- Preheat oven to 350°F. Place yams or sweet potatoes on a foil-lined baking sheet and cook for 35-40 minutes, until partially tender.
- Remove from oven. When potatoes are cool enough to handle, slice 1/2" off each potato, lengthwise, exposing the flesh. Using a paring knife, cut an oval into the potato and scoop out the potato flesh with a spoon, making sure the indentation is deep enough to fit an egg.
- Crack an egg into each potato. Return potatoes to oven on baking sheet and bake until egg is set, another 20-25 minutes. Garnish potatoes with bacon and green onion and serve immediately.
