Turn dough out onto a floured surface and knead for 5 minutes. Divide dough in half and form each piece into a smooth ball. Wrap one ball in plastic wrap for future use. (Refrigerate dough for two days or freeze for up to three months.) Flatten remaining dough ball into a circle and roll into a 12" pizza crust about 1/8" thick. Transfer crust to an oiled baking pan. Spread a thin layer of sauce on top and bake until crust begins to brown, about 5-7 minutes. Remove pan from oven and top crust with sliced vegetables, pepperoni and cheese. Return pizza to oven and continue baking for 10-12 minutes or until cheese has melted and crust is golden.
