Greek Meatballs with Tzatziki

Ingredients

  • 1 egg
  • 1 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1/4 cup Schnucks panko breadcrumbs
  • 2 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1 tsp. dried oregano
  • 1 tsp. dried marjoram
  • 1 tsp. dried ground rosemary
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 lb. lean ground beef or ground turkey
  • 1/2 lb. ground lamb
  • tzatziki sauce (see recipe notes)

Instructions

  1. Preheat oven to 450 degrees. Combine all ingredients except the meat and sauce in a large bowl. Add ground meat and gently mix until just combined (do not over mix). Form into 1-inch meatballs and arrange on a prepared sheet pan.
  2. Bake about 15 minutes or until browned and internal temperature reaches 165 degrees.
  3. Meanwhile, start to prepare the tzatziki sauce by wrapping the shredded cucumber in a clean kitchen towel (or a few paper towels) and gently squeezing out excess moisture. Add to a medium bowl along with remaining sauce ingredients. Stir until combined. Cover and refrigerate until ready to serve.
  4. Serve meatballs topped with tzatziki sauce.

Tzatziki Sauce

  • 1/4 cup finely grated cucumber
  • 1/2 cup whole-milk Greek yogurt
  • 1 tbsp. lemon juice plus
  • 1 tsp. lemon zest
  • 1 tsp. Schnucks olive oil
  • 1 garlic clove, finely grated
  • 2 tsp. chopped fresh dill
  • 1 tsp. chopped fresh mint (if desired)
