Ingredients

  • 3 cups sliced fresh strawberries, divided
  • 2 fresh kiwis, thinly sliced
  • 2 fresh mandarin oranges, peeled & sectioned
  • 1 fresh peach, pitted & cut into thin wedges
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup halved grapes
  • 8 sheets rice paper
  • 1/4 cup chopped mint leaves

Instructions

  1. Add 2 cups strawberries to a blender and mix until smooth; transfer to a small bowl and set aside. In a medium bowl, combine remaining fruit.
  2. Place 3/4 cup of filling and mint in rice paper and roll. Serve immediately with puréed strawberries for dipping.

Recipe Notes

Rolling Instructions
    1. Fill a shallow bowl with cold water. Soak one sheet at a time until pliable (about 20 seconds).
    2. Transfer wet rice paper to a clean surface and evenly place filling in the middle.
    3. Fold both sides in to cover edges of filling.
    4. Finish by rolling upwards to form a neat roll shape.
