Ingredients
- 2 tbsp. butter, divided
- 1/2 medium yellow onion, thinly sliced
- 1 (12 oz.) bag Schnucks frozen mixed vegetables, thawed
- 1 tsp. minced garlic
- 1/2 tsp. Schnucks ground ginger
- 1 large eggs, lightly beaten
- 3 cups cooked brown rice
- 1/4 cup water
- 1/4 cup low sodium soy sauce
- 1 tsp. hot sauce (more or less to taste)
- 2 green onions, sliced
Instructions
- Heat a large skillet over medium heat. Add 1 tablespoon of butter and onions, then cook for 3 minutes until fragrant. Add vegetables, garlic and ginger, then cook for 1 minute more.
- Push the vegetables to one side of the pan, add remaining butter and pour in the eggs. Cook, stirring frequently, until just scrambled. Stir to mix with vegetables.
- Add the rice, soy and hot sauce; stir fry for 2–3 minutes until warmed through. Top with green onions and serve immediately.
