Ingredients

For Mediterranean Salad
  • 2 cups red and/or orange cherry or grape tomatoes, halved
  • ½ English cucumber, cut lengthwise in half, sliced into ¼" thick slices
  • ½ red onion, sliced
  • 3 tbsp fresh lemon juice
  • 2½ tbsp olive oil
  • ¼ tsp McCormick® ground black pepper
  • 1 cup feta cheese chunk or crumbled feta cheese
  • Falafel Waffles
  • (2) 16 oz cans reduced-sodium garbanzo beans, drained and rinsed
  • ⅓ cup parsley, finely chopped
  • ⅓ cup fresh lemon juice
  • ⅓ white onion, finely diced
  • ¼ cup minced garlic
  • 3 tbsp cilantro leaves, finely chopped
  • 2 tbsp plus 2 tsp Schnucks all-purpose flour
  • 2 tbsp Schnucks vegetable oil
  • 1 tbsp ground coriander
  • 1 tbsp Schnucks ground cumin
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp McCormick® ground black pepper
  • Instructions

    1. Prepare Mediterranean Salad: In medium bowl, toss all ingredients, except cheese, until combined; fold in cheese. Cover and refrigerate up to 4 hours. Makes about 4 cups.
    2. Prepare Falafel Waffles: Preheat waffle iron to medium-high. In food processor with knife blade attached, in batches if necessary, pulse all ingredients until mixture is well combined.
    3. For each waffle, evenly spread ¾ cup waffle mixture over waffle iron; close iron. Cook 5 minutes or until waffle is golden brown. Serve with Mediterranean Salad.
