- 12 endive leaves
- 1 cup cucumber, quartered and thinly sliced
- 2 tbsp. blue cheese, crumbled
- freshly ground black pepper, to taste
- 3 pieces prosciutto, cut into strips
- thyme sprigs, for garnish
- In a small bowl, combine orange juice, honey and olive oil. Arrange endive leaves on a platter and top with cucumber, blue cheese, prosciutto and vinaigrette. Season with black pepper and a small thyme sprig. Serve immediately.
