Ingredients

  • 1 tbsp. freshly squeeze orange juice
  • 1 tsp. honey
  • 1 tsp. Schnucks olive oil
  • 12 endive leaves
  • 1 cup cucumber, quartered and thinly sliced
  • 2 tbsp. blue cheese, crumbled
  • 3 pieces prosciutto, cut into strips
  • freshly ground black pepper, to taste
  • thyme sprigs, for garnish

Instructions

  1. In a small bowl, combine orange juice, honey and olive oil. Arrange endive leaves on a platter and top with cucumber, blue cheese, prosciutto and vinaigrette. Season with black pepper and a small thyme sprig. Serve immediately.
