Ingredients

  • 1 yellow bell pepper, seeds removed
  • 4 large Schnucks eggs

Instructions

  1. Carefully cut pepper, horizontally, into 1/2-inch slices to create pepper rings.
  2. In a greased, nonstick skillet over medium heat, cook 4 pepper rings for 2 minutes. Flip peppers and firmly press into surface of pan.
  3. Carefully crack 1 egg into each ring, cover skillet and cook eggs until desired doneness
