- 2 cups all-purpose flour
- 3 whole eggs
- 2-3 egg yolks
- 2 tbsp. olive oil
- pinch of salt
- Combine all ingredients in a mixer with a dough hook. Begin to knead the dough on low speed.
- Continue kneading the dough in the mixer, until a smooth dough forms. Remove from the bowl, and knead by hand for five minutes. Wrap the dough in plastic wrap and rest for 30 minutes.
- Assemble the pasta roller and sheet the pasta to an appropriate thickness (the setting will depend on the pasta roller).
