Classic Fish Sandwich

Ingredients

  • 2 cups tri-color coleslaw mix
  • 1/4 cup low-fat mayonnaise
  • 1 tbsp. Schnucks lemon juice
  • 1 tbsp. chopped fresh parsley
  • 16 oz. frozen battered fish fillets
  • 2 tomatoes, sliced
  • 1/4 red onion, thinly sliced
  • 4 lettuce leaves
  • 4 Schnucks brioche hamburger buns

Instructions

  1. In a large bowl, stir together coleslaw, mayonnaise, lemon juice and parsley. Let stand, stirring occasionally, 15 minutes.
  2. Meanwhile, cook fish according to package directions. Divide fish, coleslaw, tomatoes, red onion and lettuce among buns. Serve immediately.
