This simple Cherry Red Caprese Salad is the perfect summer side to bring to your next picnic or backyard BBQ. It’s sweet, delicious and loaded with healthy ingredients.

Ingredients

  • 2 tbsp. balsamic vinegar
  • 1 tsp. Dijon mustard
  • 1/4 cup Schnucks olive oil
  • 20 oz. multicolor cherry tomatoes, halved
  • 1 (8 oz.) pkg. mozzarella pearls
  • 1/4 cup fresh basil, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. In a large mixing bowl, whisk together the vinegar, mustard and oil. Add the tomatoes and mozzarella; toss to coat. Let marinate for 30 minutes, tossing occasionally.
  2. Place the tomatoes in a large serving bowl. Top with fresh basil.
