Using your slow cooker makes it extra easy to have authentic, full of flavor carnitas that are perfect for any Mexican style dish.
- 3 tbsp. chili powder
- 3 tsp. ground cumin
- 3 tsp. dried oregano
- 3 tsp. salt
- 1 1/2 tsp. ground black pepper
- 5 lb. pork shoulder
- 2 onions, quartered
- 3 tbsp. lime juice
- 1 tbsp. minced garlic
- 1 (20 oz.) can pineapple tidbits in 100% pineapple juice, juice only
- Combine spices and rub all over pork.
- Add to a slow cooker with remaining ingredients. Cover and cook on low until pork is tender, about 8 hours.
- Let cool and shred pork.
