Buffalo Chicken Wraps

Ingredients

  • 1 lb. chicken breast, diced
  • 1/2 cup low-fat buttermilk, divided
  • 1 cup whole wheat flour
  • 1/4 tsp. pepper
  • 1 cup canola oil
  • 1/2 cup Original Tabasco sauce
  • 4 tsp. white vinegar
  • 1/2 tsp. garlic powder
  • 1 cup shredded lettuce
  • 2/3 cup chopped tomatoes
  • 1 English cucumber, seeded and cut into sticks
  • 4 10-inch whole wheat Mission tortillas
  • 4 tbsp. Bolthouse Farms blue cheese dressing

Instructions

  1. In a large bowl, add chicken and 1/2 cup buttermilk; toss to combine. In a separate shallow bowl combine flour and pepper. Working in small batches, toss chicken pieces in flour mixture until all are coated evenly.
  2. In a large skillet preheat oil over medium high heat. Cook chicken for 4 to 5 minutes in small batches, drain on paper towels.
  3. In a small saucepan over medium heat, add Tabasco sauce, white vinegar and garlic powder. Whisk to combine, about 2-3 minutes, remove from heat and allow to cool.
  4. To assemble: Toss chicken in pepper hot sauce, coating all sides. Place chicken in center of each tortilla, layer with lettuce, tomatoes and cucumbers, then drizzle with blue cheese dressing. Fold ends of each tortilla over filling and roll into wrap. Serve immediately.
