This salad is beefy, leafy and delicious.

Ingredients

  • 1 tbsp. Schnucks extra virgin olive oil
  • 1 tsp. red wine vinegar
  • 1/4 tsp. Schnucks Dijon mustard
  • 2 cups Organic Girl fresh spinach
  • 3 oz. Verde Farm organic beef tenderloin, cooked and sliced
  • 2 new potatoes, cooked and sliced
  • 4 cherry tomatoes, halved
  • 1 radish, slivered
  • salt and pepper, to taste

Instructions

  1. Whisk together extra virgin olive oil, red wine vinegar and Schnucks Dijon mustard. Set aside.
  2. In a large bowl, toss together spinach, beef tenderloin, potatoes, cherry tomatoes, radish and olive oil mixture.
  3. Season with salt and pepper.
