This salad is beefy, leafy and delicious.
Ingredients
- 1 tbsp. Schnucks extra virgin olive oil
- 1 tsp. red wine vinegar
- 1/4 tsp. Schnucks Dijon mustard
- 2 cups Organic Girl fresh spinach
- 3 oz. Verde Farm organic beef tenderloin, cooked and sliced
- 2 new potatoes, cooked and sliced
- 4 cherry tomatoes, halved
- 1 radish, slivered
- salt and pepper, to taste
Instructions
- Whisk together extra virgin olive oil, red wine vinegar and Schnucks Dijon mustard. Set aside.
- In a large bowl, toss together spinach, beef tenderloin, potatoes, cherry tomatoes, radish and olive oil mixture.
- Season with salt and pepper.
