Ingredients

  • 1 1/2 cups Lime of Scrimmage Dressing and Marinade (see recipe notes)
  • 3 cups cooked quinoa
  • 2 (15 oz.) cans black beans
  • 1 red bell pepper, diced
  • 1 bunch of green onions, sliced
  • 1/4 red onion, diced
  • cilantro, for garnish

Instructions

  1. Add all ingredients to a large bowl and stir to combine.
  2. Store in an air-tight container and refrigerate until ready to serve.
