Start your day the lemon-blueberry no-bake way.
- ⅓ cup rolled oats
- 1 cup almonds
- ¼ cup collagen protein powder
- 1 tbsp chia seeds
- 1 tbsp flax seeds
- ⅓ cup peanut butter
- 1 tsp cinnamon
- 1 tsp ground ginger
- ¼ cup honey
- 1 tsp vanilla extract
- 3 tbsp ground cashews
- ⅓ cup chopped dried blueberries
- Zest of 2 lemons
- In a blender or food processor, grind oats and almonds.
- In a large bowl, mix together all ingredients except ground nuts.
- Form mixture into 22 1" balls and roll in ground nuts, if desired.
- Cover and refrigerate for 30 minutes before serving. Store in refrigerator for up to six weeks.
