BUN: Lettuce Wrap
TOPPINGS: Radish slices, banana pepper slices, grilled zucchini and carrot spirals
PREP AND GRILLING: 1 cup cooked brown rice, 1 can black beans, drained and rinsed, 1 jalapeno, finely diced, ¾ cup walnuts pieces, lightly toasted, ½ panko bread crumbs, ½ c. white onion, 1 tbsp. ground cumin, 1 tbsp. smoked paprika, 1 tsp. Kosher salt, 1 tsp. pepper, 1 tsp. honey, 2 cloves garlic, minced,.Thoroughly dry black beans with paper towels. Place all ingredients in a food processor and pulse until combined. Divide into four equal patties and chill for 3 hours. Spray with non-stick cooking spray and grill over direct heat for 5 minutes on each side.
