Roast Any Veggie

Cut produce into roughly 1-inch pieces and toss with olive oil, salt and pepper. Arrange in a single layer, with a little space in between, on a foil-lined sheet pan (use more than one pan if necessary) and bake at 425 degrees until browned and tender, stirring every 10 minutes.
