Schnucks Corporate Executive Chef, Alex LaZella, shared his top tips on how to roast a chicken.
Season your chicken.Salt, pepper and olive oil is great. Adding lemon and herbs will also elevate the flavor. If available, zest and juice one lemon. Add fresh basil and thyme. Toss chicken to coat.
Let it sit.Once the chicken is seasoned, let it sit for an hour or two. This can also be done the night before cooking.
Set the oven.Preheat to 425 degrees. Cooking temperature is the same if you are cooking a whole chicken or chicken pieces.
Cooking time.For bone-in chicken or chicken pieces, roast between 45 minutes to 1 1/2 hours until the internal temperature reaches 170 degrees. Boneless chicken breasts will cook quicker than bone-in; keep an eye on them as they cook.
Let it rest.Once the chicken is at 170 degrees, remove from the oven. Let it rest for 10 minutes for a whole bird or 5 minutes for separated bone-in pieces, and then you are ready to serve!
