Spicy Thai Lettuce Wraps

Dressing

1 tbsp. chili paste
1 tbsp. Schnucks honey
1 tsp. Schnucks soy sauce
1-2 garlic cloves, minced
1 tbsp. fresh lime juice
1 tsp. fresh ginger, grated

Thai Turkey

1 lb. ground turkey
½ cup red onion, cut into slivers
2 green onions, thinly sliced
1 stalk celery, thinly sliced
1 Serrano pepper, thinly sliced
2 tbsp. fresh mint leaves, chopped
salt and pepper
1 head iceberg lettuce, leaves separated
2 tbsp. cilantro, coarsely chopped

  1. In a small bowl, whisk all the ingredients for the dressing. Set aside.
  2. Brown ground turkey in a large nonstick skillet on medium heat, until cooked through. Add red and green onions, celery and Serrano pepper. Cook until the vegetables begin to soften.
  3. Add the dressing to turkey mixture in skillet and cook 2 minutes. Remove from the heat and stir in the mint. Season with salt and pepper.
  4. Divide and spoon the turkey mixture evenly onto lettuce leaves. Garnish with cilantro.
